Longjing, or Dragon Well, is the crown jewel of Chinese green teas. Grown near the West Lake in Hangzhou, it is famous for its flat, sword-shaped leaves and jade-green color. Unlike steamed Japanese greens, Longjing is pan-fired in large woks, which stops oxidation and imparts a warm, toasted, nutty character.
